Grilled Hake Recipe

Bertha Semillon (2021) Paired with Grilled Hake, Curried Pureed Butternut, Long Stem Broccoli served with Yogurt

Ingredients:

For the Hake:

  • 4 hake fillets
  • 2 tablespoons of olive oil
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of ground black pepper
  • 1/2 teaspoon of paprika

For the Curried Puree Butternut:

  • 1 butternut squash, peeled and cubed
  • 1 tablespoon of olive oil
  • 1 teaspoon of curry powder
  • 1/2 teaspoon of ground cumin
  • 1/2 teaspoon of ground coriander
  • Salt and pepper to taste

For the Long Stem Broccoli:

  • 1 bunch of long-stem broccoli, trimmed
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • For the Yogurt Sauce:
  • 1/2 cup of Greek yogurt
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste

Instructions:

  • Preheat the grill to medium-high heat.
  • Brush the hake fillets with olive oil and season them with salt, black pepper, and paprika.
  • Place the hake fillets on the grill and cook for 3-4 minutes per side or until the fish is cooked through and flakes easily with a fork.
  • While the hake is grilling, heat a large skillet over medium heat.
  • Add the cubed butternut squash and olive oil to the skillet and sauté for 5-7 minutes until the squash is tender.
  • Add the curry powder, cumin, coriander, salt, and pepper to the skillet and stir well.
  • Use a hand blender or food processor to puree the butternut squash mixture until smooth.
  • Steam the long-stem broccoli until tender and then toss with olive oil, salt, and pepper.
  • In a small bowl, whisk together the Greek yogurt, lemon juice, salt, and pepper to make the yogurt sauce.
  • To serve, spread a layer of the curried pureed butternut on each plate, then place a grilled hake fillet on top of the pureed butternut.
  • Add a serving of the long stem broccoli to each plate, then drizzle the yogurt sauce over the top.
